Ingredients :

250 grams/8.8 oz unsalted butter, room temperature
250 grams/8.8 oz (1 cup + 3 tablespoons) white granulated sugar
5 eggs, large, at room temperature
250 grams/8.8 oz ( 2 cups) all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon pure vanilla extract
Appropriate amount of strawberry jam

Instructions :

This mini liquid strawberry cake is delicious in one bite. Super easy to cook and perfectly served hot.

Preheat your oven to 350 degrees Fahrenheit then prepare a mini cake pan by greasing it and then lightly coating it with flour. Set it aside. In a mixing bowl, add 250 grams of unsalted butter at room temperature with 250 grams of white granulated sugar.

Mix on medium speed until creamy and the color becomes light and fluffy. With the mixer on medium-low speed, add 5 eggs one at a time and beat the mixture well after each addition. The mixture may look a little curdled after adding eggs, this is okay because once you add the flour it will all come together into a smooth dough.

Measure 250 grams of all-purpose flour and add a teaspoon of baking powder and half a teaspoon of salt. Mix the dry ingredients together then add the flour mixture into the buttery egg mixture. Mix on low speed as you add the flour until you have a smooth dough. You want to mix the dough until it is smooth and free of lumps. Do not overmix the dough.

To add flavor, add a tablespoon of vanilla extract and blend for a minute. Pour the batter about a quarter of the way into the baking pan and add the strawberry jam, then add more batter to fill the jam about three-quarters of the way into the pan.

Repeat the same thing in each of the cake pans until the batter is complete.

Bake the cake in a preheated 350F oven for 40 to 50 minutes or until golden brown. Once cooked, remove from the oven and allow the cakes to sit in the pan for about 10 minutes, then remove and place on a rack. Take a bite to feel the taste of this cake and the strawberry.

Serve them warm or cold with a cup of tea or milk.
