Strawberry ice cream is a fresh and delicious spoon dessert that will allow you to amaze your guests in just a few minutes. It is a spring variant of gelo di mellone , a great classic of Sicilian pastry, ideal to serve as a refined end of a meal or for a gourmet break with special guests.
To prepare it, simply blend the chopped strawberries with the lemon juice and granulated sugar in the bowl of a mixer. Once the fruit has been reduced to a puree, it is passed through a narrow-mesh sieve, left to thicken over a low heat with the corn starch dissolved in warm water, and then poured into single-portion moulds. The result, after resting in the fridge, will be an exquisite dessert, with a consistency similar to that of a pudding but lighter, to be garnished as desired with diced strawberries and fresh mint leaves .

How to prepare strawberry frosting
Step 1
Rinse the strawberries and cut them into slices1.

Collect them in the bowl of a blender together with the sugar2and lemon juice, and puree them.

Sift the strawberry puree through a fine-mesh sieve3and collect the past in a thick-bottomed saucepan.

Separately, dissolve the cornstarch in 100 ml of water, mixing well with a spoon4.

Incorporate the melted cornstarch into the strawberry puree5.

Put on the fire and cook on a low flame for about 10 minutes, stirring constantly with a wooden spoon.6.

For a more spectacular rendering, you can pour the strawberry ice directly into glass cups and then decorate the surface with a dollop of whipped cream, chopped pistachios or chocolate drops.
