Soft, Fluffy Castella Cake Recipe
Ingredients:
- 4 large eggs
- 75 grams (1/2 cup + 1 tbsp) all-purpose flour
- 75 grams (1/3 cup) unsalted butter
- 60 ml (1/4 cup) milk
- 1 tsp vanilla extract
- 70 grams (1/3 cup) sugar
Directions:
- Preheat the oven to 320°F and prepare a cake pan by cutting a piece of parchment paper to fit the bottom, then lining the bottom and sides with parchment paper.
- In a mixing bowl, beat the eggs and sugar together until thick and pale.
- Sift the flour into the egg mixture and gently fold in until well combined.
- In a small saucepan, melt the butter with the milk over low heat, then add in the vanilla extract.
- Slowly pour the butter mixture into the batter, folding gently until fully incorporated.
- Pour the batter into the prepared cake pan and tap on the counter to remove any air bubbles.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before removing and transferring to a wire rack to cool completely.
