Quick no-bake cake

Ingredients :

300 g dry cookies
120 g of melted butter
500 g Mascarpone cheese
300 ml of cold vegetable cream
1 teaspoon of Vanilla extract

Preparation of a quick no-bake cake :

Line an 18 cm pan with baking paper.
Chop the cookies in a blender, then put them in a bowl, add the melted butter and mix well until smooth.
Pour the cookie mixture, keeping some for decoration, into the mould and compact it with the back of a spoon on the bottom and along the edges. Put the base in the refrigerator.
In another bowl, put the mascarpone, the cold vegetable cream, the vanilla extract and whip with the electric beaters until you get a fluffy and compact cream.
Take the base of the refrigerator and pour the mascarpone cream into it, levelling it well.
With a spoon, cover the cream with the cookies you have set aside.
Place the cake in the refrigerator for at least 4 hours before serving.
Your quick no-bake cake is ready, bon appétit.
