Here is a recipe for Mhajeb harin, it is a kind of puff pastry, made from semolina, most often stuffed with onion and tomato.
Ingredients :
4 measures of semolina or fine semolina
1 measure of flour
Salt according to quantity
Lukewarm water
Mutton oil or fat.
Onions
canned tomato
Pepper
Peppers
Salt, pepper, paprika, coriander, lots of garlic and harissa
Preparation :
Mix semolina, flour and salt then mix with water until obtaining a soft and elastic dough with a good kneading.
Form balls the size of tangerines using oil and put in an oiled tray, cover with transparent film and leave to rest for a maximum of about 4 hours.
On an oiled work surface, spread a ball of dough, stretch it in a circular way.
Drizzle with oil and fold in half. On one of the ends, place a good tablespoon of stuffing as well as the cheese of your choice, place a little stuffing.
Cover with the opposite side and then the other two to form a square.
Place on a hot plate, when the first side is golden brown, turn over and cook the second.
Continue like this until the dough and stuffing are used up.
