Lemon Fondant

Lemon fudge is a sweet and tart dessert that melts in your mouth. It is made by mixing sugar, flour, eggs, lemon and butter, then baked until it forms a golden crust and a melting texture inside. Lemon fudge can be served hot or cold, alone or with ice cream or whipped cream.

Ingredients :

4 eggs
130 g sugar
120 g flour
80 g melted butter, cooled
1 packet of baking powder
100 ml lemon juice, I squeezed 2 big lemons
Zest of one lemon
1 pinch of salt
The lemons must be organic or untreated!

Preparation :

First of all, preheat the oven to 180 degrees.
Start by separating the whites from the yolks, put the sugar on the yolks and whiten them with an electric whisk or a food processor,
Then add the melted butter, continue to beat, then add the lemon juice and zest and beat the mixture, we will now mix the yeast with the flour and add this mixture by sifting it to the previous always beating with a whisk, set aside.
Whisk the egg whites with a pinch of salt, and gently fold them into the mixture in small quantities to avoid breaking the whites. When the mixture is well incorporated, pour it into the lined baking pan and bake for 20 to 25 minutes.
