Chocolate cake

Chocolate cake – plasma

Ingredients :

measurements for a crust
4 egg whites
5 spoons of sugar
7 spoons of ground walnuts
1 spoon of flour
half a sachet of baking powder for
make 3 of these crusts
thread
12 egg yolks
10 spoons of sugar
250g. butter or margarine
180g. Powdered sugar
200g. ground plasma biscuit
250g. powdered milk
3 cl. sweet milk cream
150g. chocolates for cooking
whipped cream and chocolates for decoration

Preparation:

Beat the egg whites and sugar until light. Lightly stir in the nuts, flour and baking powder. Prepare a 26 cm diameter springform pan, line the bottom with paper, grease the edges, pour in the mixture and bake in an oven preheated to 180 degrees for about 12-15 minutes. Leave to cool and only then thin the crust from the rim, so that it does not shrink and significantly reduces the volume.

For the filling, whisk the egg yolks and 10 tablespoons of sugar into a thick mixture, so that the egg yolks whiten. Boil for about 15 minutes, stirring occasionally, then let cool completely.

Beat the butter with the powdered sugar, add the previous mixture, mix, add the beaten sweet cream, the plasma and the powdered milk and mix everything well.
Separate a third of the mixture and add the melted chocolate to the rest.
Leave to rest for 1 hour in the refrigerator to garnish the cake.

Leave the cake overnight in the refrigerator so that the crust softens, the filling hardens and the flavors settle. The next day, decorate with whipped cream and chocolate.

REMARKS :
The powdered milk must be of good quality, otherwise it has the particularity of being “spillable” and therefore making the filling thinner.
