Soft and lemon flavored cookies, perfect for a breakfast or a snack. With their delicate flavor and melting texture, they are easy to prepare and will please everyone.
Ingredients :
2 eggs
60g (½ cup) sugar
50 ml (3 tbsp.) lemon juice
30 ml (2 tablespoons) vegetable oil
½ lemon (zest)
1 teaspoon (5g) baking powder
210 g (1 ⅔ cup) all-purpose flour
50 g (¼ cup) cornstarch
120 ml (½ cup) milk
Sugar for sprinkling
Preparation :
Whisk the eggs with the sugar, lemon zest, vegetable oil and lemon juice.
Mix flour, cornstarch and baking powder separately.
Add the dry ingredients to the egg mixture and stir to combine.
Reserve the dough in the refrigerator for 30 minutes.
Cut the cooled dough into pieces and roll it into balls.
Place the cookies on a baking sheet and bake for 15 minutes at 180°C/350°F.
Let the cookies cool, then dip them in the milk and cover them with sugar.
