Ingredients:
2 cups shredded Monterey jack cheese
16 ounces ground beef
1/2 medium onion, thinly sliced
1 bell pepper, thinly sliced
1 tsp Worcestershire sauce
4 ounces cream cheese
4 low-carb tortillas

Directions:

  1. In a skillet over medium heat, cook the ground beef until browned. Add the sliced onion and bell pepper, cooking until softened.
  2. Stir in the Worcestershire sauce and cream cheese, allowing the cream cheese to melt and create a creamy mixture.
  3. Place a low-carb tortilla on a flat surface and spoon some of the beef mixture onto it. Sprinkle with shredded Monterey jack cheese.
  4. Roll up the tortilla tightly and place seam-side down on a baking sheet. Repeat with remaining tortillas.
  5. Bake in a preheated oven at 375°F for 10-12 minutes, until the tortillas are crispy and the cheese is melted.
