Cottage Cheese Egg Bites
Ingredients:
- 6 large eggs
- 1 cup of cottage cheese
- ½ cup of shredded cheese (cheddar, mozzarella, or your favorite!)
- ½ cup of diced veggies (spinach, bell peppers, mushrooms, etc.)
Directions:
- Preheat your oven to 350°F (180°C) and grease a muffin tin.
- In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
- Stir in the shredded cheese and diced veggies until evenly distributed.
- Pour the mixture into the prepared muffin tin, filling each cup about ¾ full.
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Remove from the oven and let cool slightly before serving.
Tips:
- Feel free to customize these egg bites with your favorite veggies or add some cooked meats for extra protein.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
