Ingredients:

  • 6 large eggs
  • 1 cup of cottage cheese
  • ½ cup of shredded cheese (cheddar, mozzarella, or your favorite!)
  • ½ cup of diced veggies (spinach, bell peppers, mushrooms, etc.)

Directions:

  1. Preheat your oven to 350°F (180°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
  3. Stir in the shredded cheese and diced veggies until evenly distributed.
  4. Pour the mixture into the prepared muffin tin, filling each cup about ¾ full.
  5. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  6. Remove from the oven and let cool slightly before serving.
    Tips:
  • Feel free to customize these egg bites with your favorite veggies or add some cooked meats for extra protein.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
