Easy Quiche Muffins | Sausage, Spinach, and Bell Pepper Mini Quiche Recipe

Ingredients:

  • 200 g (7 oz) of Ground Beef Sausage
  • 1 cup (60 g) of Fresh Spinach, chopped
  • 1 medium Bell Pepper, finely diced
  • 6 large Eggs
  • 1/2 cup (120 ml) of Milk
  • 1 cup (100 g) of Shredded Cheese (cheddar, mozzarella, or a mix)
  • 1/2 teaspoon of Salt
  • 1/2 teaspoon of Black Pepper
  • 1/4 teaspoon of Garlic Powder
  • 1/4 teaspoon of Paprika
  • 1 tablespoon of Olive Oil, for cooking

Directions:

  1. Preheat the oven to 350°F (180°C) and grease a muffin tin with non-stick spray.
  2. In a skillet, heat olive oil over medium heat. Add the ground sausage and cook until browned. Remove from heat and set aside.
  3. In a bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika until well combined.
  4. Stir in the chopped spinach, bell pepper, cooked sausage, and shredded cheese into the egg mixture.
  5. Pour the mixture evenly into the prepared muffin tin.
  6. Bake in the preheated oven for 20-25 minutes, or until the quiche muffins are set and slightly golden on top.
  7. Allow the muffins to cool for a few minutes before removing them from the tin.
