Easy Quiche Muffins | Sausage, Spinach, and Bell Pepper Mini Quiche Recipe
Ingredients:
- 200 g (7 oz) of Ground Beef Sausage
- 1 cup (60 g) of Fresh Spinach, chopped
- 1 medium Bell Pepper, finely diced
- 6 large Eggs
- 1/2 cup (120 ml) of Milk
- 1 cup (100 g) of Shredded Cheese (cheddar, mozzarella, or a mix)
- 1/2 teaspoon of Salt
- 1/2 teaspoon of Black Pepper
- 1/4 teaspoon of Garlic Powder
- 1/4 teaspoon of Paprika
- 1 tablespoon of Olive Oil, for cooking
Directions:
- Preheat the oven to 350°F (180°C) and grease a muffin tin with non-stick spray.
- In a skillet, heat olive oil over medium heat. Add the ground sausage and cook until browned. Remove from heat and set aside.
- In a bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika until well combined.
- Stir in the chopped spinach, bell pepper, cooked sausage, and shredded cheese into the egg mixture.
- Pour the mixture evenly into the prepared muffin tin.
- Bake in the preheated oven for 20-25 minutes, or until the quiche muffins are set and slightly golden on top.
- Allow the muffins to cool for a few minutes before removing them from the tin.
