Chicken Thighs with Green Beans and Red Potatoes.

INGREDIENTS :

1.5 kilograms of chicken thighs
300 grams of green beans
300 grams red potatoes cut into dices
4 cloves of minced garlic
5 tablespoons olive oil
juice of one lemon
salt
pepper

Preparation:

Preheat oven to 200°C.
Face a large baking dish with one tablespoon of olive oil.
Mix together the lemon juice with remaining 4 tablespoons of olive oil, garlic, salt and pepper in a large bowl.
Add the green beans and toss to coat.
Remove the green beans with a slotted spoon and place them in the dish.
Add the potatoes to the same lemon mixture and toss to coat.
Arrange the potatoes using a slotted spoon along the inside edge of the dish on top of the green beans.
Place the chicken thighs in the same bowl with the lemon mixture and coat thoroughly.
Put the chicken in the dish.
Cast the remaining lemon mixture over the chicken.
Roast for about 45 minutes.
Remove the chicken from the dish.
Take the beans and potatoes back to the oven for 10 minutes until the potatoes are tender and golden.
Place a chicken thighs and potatoes onto a platter with the green beans.
Serve warm and enjoy.
