Ace cake: the recipe for a soft and fragrant dessert

The Ace cake is a soft , genuine and citrus-scented cake, perfect for breakfast or as a snack for young and old: one slice after another will literally be snapped up for how good and light it is. To make this very simple recipe, both the zest and juice of two oranges and one lemon are used ; to obtain the orange color, however, just blend the carrots with the sunflower oil. A very quick preparation since, after having whipped the eggs with the sugar, all the other ingredients are added and only at the end is the mixture mixed with an electric whisk.
Baking, on the other hand, requires a little more patience: having a very moist consistency, it takes at least 45 minutes for the cake to dry; however, we recommend monitoring the cooking after about 40 minutes with a toothpick which must come out dry and without dough residue. The Ace cake takes its name from the vitamins A , C and E contained in citrus fruits and carrots, and recalls the well-known multivitamin fruit juice loved by all of us.
We used a donut mold , but you can use a round cake pan without a hole or smaller muffin molds: in this way you will have delicious single-portion cakes (however, cooking will be shorter). Whatever the shape, Ace cake will not lose its soft texture and delicate flavor that distinguish it. If you like, you can flavor the dough with cinnamon, vanilla or cardamom and enrich the dough with chocolate chips or flaked almonds.

How to prepare cake Ace :
Peel the carrots, wash them and cut them into small pieces. Transfer the chopped carrots to a blender1.
Pour in the sunflower oil2.
Close and blend at maximum speed3.
The carrot puree must be well mixed with the oil4.
Crack the eggs into a large bowl5.
Whip with electric beaters7.
The egg and sugar mixture should be clear and frothy8.
Combine the carrot puree9.
