Sprits or Viennese Shortbread are small biscuits
Sprits or Viennese Shortbread are small biscuits that are both crispy and melt-in-the-mouth, they can be kept for several days in an airtight container.
Ingredients :
200g flour
175g butter
70g icing sugar
30g egg white
A pinch of salt
1 sachet of vanilla sugar
Chocolate for decoration
Preparation :
Preheat the oven to 160°.
Start by creaming the icing sugar, the butter, the sachet of vanilla sugar and the salt with a mixer at maximum speed for about 3 minutes.
The mixture should whiten and become creamy.
Add the egg white and whisk for another minute at maximum speed.
Now add the flour by hand. It is with a spatula that you will have to incorporate it, but without mixing too much.
Fill a pocket with the dough.
Pipe the cookies onto the baking sheet. Normally you have to make a “W” shape.
Bake for around 15 mins. This cooking time will have to be adapted according to the size.
Let them cool on a rack as soon as they come out of the oven, sliding them, because, as I have just explained, you cannot handle them hot.
If you want to add a touch of chocolate, when the cookies are very cold, melt the chocolate for 4 minutes in the microwave at 400W, and dip half of the cookie each time.
Note: The sprits can be kept for several days in an airtight box.
