This colorful pasta salad is packed full of flavor with tender pieces of ham, cheese tortellini and fresh, crisp veggies.
INGREDIENTS:
3 cups cheese tortellini, uncooked
1 cup cooked ham, chopped
1 red pepper, julienned
1 carrot, julienned
1/2 cup frozen peas, cooked
2 green onions, sliced
Dressing:
1 cup extra virgin olive oil
1/2 cup white wine vinegar
2 tablespoons wholegrain mustard
2 tablespoons fresh parsley, chopped or 1 teaspoon dried parsley
3 cloves garlic, minced
INSTRUCTIONS :
1.Cook cheese tortellini according to package directions. Drain, Rinse in cold water. Set aside.
2.Add cheese tortellini, ham, red pepper, carrots, peas and green onions to a large bowl and toss to combine.
3.In a small bowl, whisk together extra virgin olive oil, white wine vinegar, wholegrain mustard, parsley and garlic. Pour over salad and toss to combine.
4.Chill for 2 hours before serving.
