Ingredients

  • 60g (4.5 tbsp) Cooking oil
  • 80g (1/3 cup) Milk
  • 100g (3/4 cup) Cake flour
  • 6 Eggs
  • 1.25ml (1/4 tsp) Vanilla extract
  • 2g Lemon juice
  • 65g (5 tbsp) Sugar

Directions

  1. Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a small bowl, whisk together the cake flour and sugar. Set aside.
  3. In a large mixing bowl, beat the eggs until light and fluffy.
  4. Gradually add in the milk, cooking oil, vanilla extract, and lemon juice. Mix until well combined.
  5. Slowly fold in the dry ingredients until just incorporated. Be careful not to overmix.
  6. Pour the batter onto the prepared baking tray, spreading it out evenly.
  7. Bake in the preheated oven for 10-12 minutes or until the cake springs back when touched.
  8. Remove from the oven and let it cool slightly before carefully rolling the cake while still warm.
  9. Allow the cake roll to cool completely before filling and rolling it back up.
