Ingredients
- 60g (4.5 tbsp) Cooking oil
- 80g (1/3 cup) Milk
- 100g (3/4 cup) Cake flour
- 6 Eggs
- 1.25ml (1/4 tsp) Vanilla extract
- 2g Lemon juice
- 65g (5 tbsp) Sugar
Directions
- Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
- In a small bowl, whisk together the cake flour and sugar. Set aside.
- In a large mixing bowl, beat the eggs until light and fluffy.
- Gradually add in the milk, cooking oil, vanilla extract, and lemon juice. Mix until well combined.
- Slowly fold in the dry ingredients until just incorporated. Be careful not to overmix.
- Pour the batter onto the prepared baking tray, spreading it out evenly.
- Bake in the preheated oven for 10-12 minutes or until the cake springs back when touched.
- Remove from the oven and let it cool slightly before carefully rolling the cake while still warm.
- Allow the cake roll to cool completely before filling and rolling it back up.
