Swedish Apple Cake
Ingredients:
- 1/2 cup unsalted butter, at room temperature
- 1 and 2/3 cups granulated sugar
- 2 large eggs
- 1 and 1/2 teaspoons vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 and 1/2 teaspoons ground cinnamon
- 3 medium apples, peeled, cored, and thinly sliced
- Powdered sugar, for dusting
Directions:
- Preheat the oven to 350°F (180°C). Grease and flour a 9-inch round cake pan.
- In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Spread half of the batter into the prepared cake pan. Layer half of the sliced apples on top. Repeat with the remaining batter and apple slices.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar before serving.
Tips:
- For extra flavor, try adding a handful of chopped nuts or raisins to the batter.
- Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
