Swedish Apple Cake

Ingredients:

  • 1/2 cup unsalted butter, at room temperature
  • 1 and 2/3 cups granulated sugar
  • 2 large eggs
  • 1 and 1/2 teaspoons vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 and 1/2 teaspoons ground cinnamon
  • 3 medium apples, peeled, cored, and thinly sliced
  • Powdered sugar, for dusting

Directions:

  1. Preheat the oven to 350°F (180°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  4. Spread half of the batter into the prepared cake pan. Layer half of the sliced apples on top. Repeat with the remaining batter and apple slices.
  5. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. Dust with powdered sugar before serving.
    Tips:
  • For extra flavor, try adding a handful of chopped nuts or raisins to the batter.
  • Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
