Spinach and Cheese Muffins

Ingredients:

  • 6 large eggs
  • 5.64 ounces (160 g) baby spinach
  • 3 tablespoons yogurt
  • 2.47 ounces (70 g) feta cheese, crumbled (a little under ⅔ cup)
  • ½ cup (50 g) cheddar cheese, coarsely grated
  • 1⅔ tablespoons all-purpose/plain flour
  • ⅓ tsp baking powder

Directions:

  1. Preheat the oven to 350°F (180°C) and grease a muffin tin or place muffin liners in each cup.
  2. In a large bowl, whisk together the eggs and yogurt until well combined.
  3. Finely chop the baby spinach and add it to the egg mixture, along with the crumbled feta and grated cheddar cheese. Mix well.
  4. Sprinkle the flour and baking powder over the mixture and fold everything together until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup almost to the top.
  6. Bake in the preheated oven for about 20-25 minutes, or until the muffins are set and golden on top.
  7. Remove from the oven and allow to cool slightly before serving.
    Tips:
  • Feel free to add some cooked and crumbled beef or turkey bacon for an extra flavor boost.
  • These muffins are perfect for a quick and easy breakfast on the go or a light lunch paired with a salad.
