Spinach and Cheese Muffins
Ingredients:
- 6 large eggs
- 5.64 ounces (160 g) baby spinach
- 3 tablespoons yogurt
- 2.47 ounces (70 g) feta cheese, crumbled (a little under ⅔ cup)
- ½ cup (50 g) cheddar cheese, coarsely grated
- 1⅔ tablespoons all-purpose/plain flour
- ⅓ tsp baking powder
Directions:
- Preheat the oven to 350°F (180°C) and grease a muffin tin or place muffin liners in each cup.
- In a large bowl, whisk together the eggs and yogurt until well combined.
- Finely chop the baby spinach and add it to the egg mixture, along with the crumbled feta and grated cheddar cheese. Mix well.
- Sprinkle the flour and baking powder over the mixture and fold everything together until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup almost to the top.
- Bake in the preheated oven for about 20-25 minutes, or until the muffins are set and golden on top.
- Remove from the oven and allow to cool slightly before serving.
Tips:
- Feel free to add some cooked and crumbled beef or turkey bacon for an extra flavor boost.
- These muffins are perfect for a quick and easy breakfast on the go or a light lunch paired with a salad.
