Southern Chocolate Cobbler
Ingredients:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 3 tablespoons unsweetened cocoa powder
- 1/2 cup milk
- 1/3 cup melted butter
- 1 teaspoon vanilla extract
Directions:
- Preheat the oven to 350°F (180°C) and grease a baking dish.
- In a mixing bowl, whisk together the flour, baking powder, salt, sugar, and cocoa powder.
- Stir in the milk, melted butter, and vanilla extract until well combined.
- Pour the batter into the prepared baking dish, spreading it out evenly.
- In a separate bowl, mix together 1/2 cup granulated sugar and 1/2 cup brown sugar. Sprinkle this mixture evenly over the batter in the baking dish.
- Slowly pour 1 1/2 cups of hot water over the top of the sugared batter. Do not mix.
- Bake in the preheated oven for 30-35 minutes, or until the top is set and edges are slightly browned. The cobbler will have a fudgy layer on the bottom and a cake-like layer on top.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy!
Tips:
- For extra richness, you can add a handful of chocolate chips to the batter before baking.
- Make sure to use hot water when pouring over the batter to help create the chocolate sauce.
- This cobbler is best served fresh out of the oven, but leftovers can be stored in an airtight container and reheated in the microwave.
