SINGLE SERVE RED VELVET CAKE

RED VELVET CAKE

this is LITERALLY dessert for breakfast!!! im def making these more cuz it’s single serve, high protein, oil free and sugar free.

dont get me wrong there’s absolutely nothing wrong with having store bought cake but I want a breakfast that will keep me feeling fuelled for the rest of the day so minus well play around in the kitchen and create a “healthified” version (ugh so sorry I used that word I don’t like to)

but anyways, don’t forget to treat yourself! also I forgot to post this for Valentine’s Day

INGREDIENTS:

1/4 cup any flour (25g)
1/2 scoop chocolate protein powder (15g)
3 tbsp granulated sweetener (30g)
1 tbsp cocoa powder (5g)
1/2 tsp baking powder

WET INGREDIENTS:
3 tbsp applesauce (30g)
2 tbsp water/milk
1 egg white (if you can, whip the egg white for a fluffier cake)
Red food colouring

FROSTING:
2/3 cup greek yogurt
3-4 tbsp powdered sweetener/sugar

SUBSTITUTIONS:
1/2 scoop protein powder- 1/2 tbsp cocoa powder + 1 tbsp flour
Applesauce- mashed banana
Egg white- Vegan egg substitute (i.e flax/chia eggs)

METHOD:

  1. Combine all the dry ingredients
  2. Separately, whip an egg white
  3. Mix in all the wet ingredients with the dry
  4. Fold in the egg white
  5. Pour mixture into mini cake pan (mine is 9cm)
  6. Bake at 350F for 20 min
  7. Let it cool (I just placed mine overnight in fridge)
  8. Slice cake in half
  9. Make your frosting and frost the cake
