Simple 3 Ingredient Sponge Cake
This simple sponge cake bakes in just over one hour. The recipe is enough to serve 4 people but you can double the recipe if you are making it for a bigger crowd.
Sponge Cake Ingredients:
5 large eggs
1 cup (200g) sugar
1 cup (125g) all purpose flour
Directions:
1: Preheat and Prep
Preheat oven to 350°F (180°C).
Grease or line a 9 inch round cake pan with parchment paper for easy removal.
2: Beat Eggs and Sugar
In a large mixing bowl, combine the eggs and sugar.
Use an electric mixer or hand whisk to beat the mixture for 8-10 minutes, until thick, pale, and ribbon like in consistency.
3: Fold in the Flour
Sift the flour over the egg sugar mixture.
Gently fold in the flour with a spatula until just combined do not overmix to keep the batter airy.
4: Bake
Pour the batter into your prepared pan and smooth the top.
Bake for 45-50 minutes until golden and a toothpick inserted in the center comes out clean.
5: Cool and Serve
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
Allow to cool completely before slicing or decorating.
