Ratatouille Tchekchouka

Elegant and easy to make, here is the Algerian ratatouille “tchekchouka” starter that will seduce your guests! a simple and vegetarian recipe.

Ingredients :

3 green peppers and 2 red peppers
3 onions, roughly chopped or sliced
4 almost ripe tomatoes
2 cloves of garlic
1 level teaspoon of salt, pepper, paprika
1 case of tomato paste + 2 pinches of oregano, 1 red pepper + 1 bay leaf + 1 good pinch of crumbled chicken stock cube (my personal touch).
4 cases sunflower oil
2 tablespoons of olive oil at the end of cooking

Preparation :

In a wok, heat the oil and brown the onions and garlic.
Once the onions have softened, season with salt and pepper then add the peppers.
Stir well until cooked then add the peeled and chopped tomato, oregano and red pepper.
Adjust the seasoning, add the bay leaf and the tomato paste diluted in a little water.
Sauté until the tomato has released all its water and the sauce has reduced. At the end of cooking, pour 2 tablespoons of olive oil and serve, preferably grilled.
