Peanut Butter Eggs
Ingredients:
- 1 lb. (about 3 1/2 cups) powdered sugar
- 1 1/2 cups smooth peanut butter
- 4 oz. cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1/2 tsp. vanilla extract
Directions:
- In a large mixing bowl, combine the powdered sugar, peanut butter, cream cheese, butter, and vanilla extract. Mix well until the ingredients come together to form a smooth dough.
- Shape the dough into egg shapes using your hands.
- Place the peanut butter eggs on a baking sheet lined with parchment paper.
- Refrigerate the eggs for at least 1-2 hours, or until firm.
- Optional: Melt chocolate and dip the peanut butter eggs into the chocolate for an extra layer of decadence.
- Place the chocolate-covered eggs back on the parchment paper and refrigerate again until the chocolate is set.

Tips:
- For a twist, you can add chopped nuts or sprinkles to the chocolate coating.
- Store the Peanut Butter Eggs in an airtight container in the refrigerator for up to two weeks.
