Ingredients:

  • 1 lb. (about 3 1/2 cups) powdered sugar
  • 1 1/2 cups smooth peanut butter
  • 4 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1/2 tsp. vanilla extract

Directions:

  1. In a large mixing bowl, combine the powdered sugar, peanut butter, cream cheese, butter, and vanilla extract. Mix well until the ingredients come together to form a smooth dough.
  2. Shape the dough into egg shapes using your hands.
  3. Place the peanut butter eggs on a baking sheet lined with parchment paper.
  4. Refrigerate the eggs for at least 1-2 hours, or until firm.
  5. Optional: Melt chocolate and dip the peanut butter eggs into the chocolate for an extra layer of decadence.
  6. Place the chocolate-covered eggs back on the parchment paper and refrigerate again until the chocolate is set.
  7. Serve and enjoy your homemade Peanut Butter Eggs!
