Peach and cream cake

Peach and cream cake: the beautiful dessert recipe that you will love

Ingredients

EGGS 2
SUGAR 100 g (1/2 cup)
VANILLA EXTRACT 1/4 teaspoon
VEGETABLE OIL 100 ml (1/3 cup + 1 tbsp)
MILK 100 ml (1/3 cup + 1 tbsp)
ALL-PURPOSE FLOUR 250 g (2 cups)
CHEMICAL YEAST 12 g (3 teaspoons)
SALT a pinch
PASTRY CREAM 160 g (2/3 cup)
MEDIUM PEACHES, PITTED AND CUT IN HALF

How to Make Peaches and Cream Cake:

Preheat the oven to 180°C/350°F. Line a 20 cm round mold with baking paper. Cut the peaches into medium slices.

Step 1
In a bowl, whisk the sugar and vanilla with the eggs until white.

2nd step
Add the vegetable oil and milk, and whisk until combined.

Step 3
In a large bowl, mix the flour with the baking powder and salt. Whisk the egg mixture into the flour. Mix until a thick paste forms. Transfer the batter to a prepared pan and smooth the top of the cake.

Step 4
Create a spiral on top of the cake.

Step 5
Spread the peaches following the line of the pastry cream.

Step 6
Bake for 50 minutes. Test the cake for doneness by inserting a skewer or toothpick into the center. The skewer should not be completely clean, then the cake is overcooked. There should be no wet dough on the stick, just a few wet crumbs. Serve sprinkled with powdered sugar. Appreciate!

Remarks :
It is normal for the cake to be slightly looser. So you may not always get clean slices because the peaches tend to moisten the inside of the cake.
