Mediterranean Grilled Cheese Sandwich

Ingredients:

  • 1 cup of fresh spinach leaves, chopped
  • ½ cup of shredded mozzarella cheese
  • 2 tablespoons of crumbled feta cheese
  • 2 tablespoons of ricotta cheese
  • 2 tablespoons of sun-dried tomatoes, drained and chopped
  • 4 slices of whole grain bread
  • 2 tablespoons of butter, softened
  • ¼ teaspoon of garlic powder
  • Salt and pepper to taste

Directions:

  1. In a small bowl, mix together the mozzarella, feta, ricotta, and sun-dried tomatoes.
  2. Spread butter on one side of each bread slice.
  3. Place two bread slices butter side down on a skillet over medium heat.
  4. Top each slice with the cheese mixture and spinach.
  5. Place the remaining bread slices on top, butter side up.
  6. Cook for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
  7. Slice the sandwiches diagonally and serve warm.
    Tips:
  • You can customize this sandwich by adding grilled vegetables or olives.
  • Use a panini press for a more even melt and crispy exterior.
  • Make sure to use a good quality mozzarella for the best cheesy pull.
