Mediterranean Grilled Cheese Sandwich
Ingredients:
- 1 cup of fresh spinach leaves, chopped
- ½ cup of shredded mozzarella cheese
- 2 tablespoons of crumbled feta cheese
- 2 tablespoons of ricotta cheese
- 2 tablespoons of sun-dried tomatoes, drained and chopped
- 4 slices of whole grain bread
- 2 tablespoons of butter, softened
- ¼ teaspoon of garlic powder
- Salt and pepper to taste
Directions:
- In a small bowl, mix together the mozzarella, feta, ricotta, and sun-dried tomatoes.
- Spread butter on one side of each bread slice.
- Place two bread slices butter side down on a skillet over medium heat.
- Top each slice with the cheese mixture and spinach.
- Place the remaining bread slices on top, butter side up.
- Cook for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
- Slice the sandwiches diagonally and serve warm.
Tips:
- You can customize this sandwich by adding grilled vegetables or olives.
- Use a panini press for a more even melt and crispy exterior.
- Make sure to use a good quality mozzarella for the best cheesy pull.
