Mango Edamame Kale Bowl Salad

INGREDIENTS :

1 bunch lacinto kale, roughly chopped, drizzled with 2 TBSP lemon juice + 1 tsp EVOO
1/2 C edamame, steamed
1 orange bell pepper, chopped
1/2 English cucumber, sliced
1 small yellow mango, cubed
1/2 bunch cilantro, chopped
1 avocado, sliced
1 package spaghetti

Sweet + Spicy Garlic Sauce:

1 TBSP chili garlic sauce (or Sriracha)
1 lime, juiced
1 TBSP agave
1 TBSP rice vinegar
1 TBSP coconut aminos
1/2 tsp crushed red pepper
1/2 tsp sesame seeds

INSTRUCTIONS :

  1. Place kale in a bowl and massage until tender.
  2. Prepare other veggies and arrange atop kale.
  3. Bring a small pot of water to a boil and add miracle noodles. Reduce heat and simmer for 5-7 minutes until desired tenderness is reached.
  4. Meanwhile, combine all ingredients for sauce. Drain noodles and immediately toss with sauce to coat. Add to bowl.
  5. Throw on an extra squeeze of lime if desired and enjoy!
