Mallorcan Bread: Good, Soft and Easy to Make at Home!
Pain de Mallorca is a traditional sourdough bread originating from the island of Mallorca, Spain. This rustic bread is made from a mixture of wheat flour and rye flour, and is known for its dense texture and crispy crust, with a slight tart taste from natural fermentation.
Ingredients :
7 g (2 ¼ tsp) dry yeast
125 ml (½ cup) of water
185 ml (¾ cup) milk
125 ml (½ cup) melted butter
60 g (⅓ cup) sugar
¼ tsp salt
3 egg yolks
540 g (4 cups) all-purpose flour
Melted butter
Full cream
Preparation :
Whisk 1 tablespoon of sugar and dry yeast in lukewarm water. Let stand 10 minutes.
Add the warm milk to the yeast solution, then stir in the egg yolks, remaining sugar and melted butter.
Add the flour and salt to the liquid mixture and mix until the dough forms.
Cover and let the dough rest for 1 hour.
Roll out the dough into a rectangle, brush it with a little butter and cut it into 12 strips.
Roll each strip into a bun as shown in the video. Leave to rise for 1 hour, then brush with cream and bake at 180C/350F for 15-20 minutes, until golden. Sprinkle with powdered sugar before serving.
