Make this Potato and Cheese Frittata for a lovely family meal
Ingredients:
- 1 tbsp olive oil
- 1 small onion, diced
- 2 medium potatoes, peeled and diced
- 6 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- Fresh herbs, for garnish
Directions:
- Preheat the oven to 350°F (180°C).
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened.
- Add the diced potatoes to the skillet and cook until they are golden brown and cooked through.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the potatoes in the skillet. Cook for a few minutes until the edges start to set.
- Sprinkle the shredded cheddar cheese over the top of the frittata.
- Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the frittata is set and the cheese is melted and bubbly.
- Remove from the oven and let it cool slightly before slicing.
- Garnish with fresh herbs before serving.
Tips:
- Feel free to add any additional vegetables or meats to customize your frittata.
- Make sure to use an oven-safe skillet to easily transfer the frittata from the stovetop to the oven.
