Ingredients:

  • 2 cups of mashed potatoes (leftover or freshly made)
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of grated Parmesan cheese
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of onion powder
  • 1/4 teaspoon of paprika
  • 2 eggs
  • 1/4 cup of milk
  • Salt and pepper to taste
  • Chopped chives for garnish

Directions:

  1. Preheat your oven to 400°F (200°C) and grease a muffin tin with cooking spray.
  2. In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, garlic powder, onion powder, and paprika. Mix well to combine.
  3. In a separate bowl, whisk together the eggs and milk. Pour this mixture into the mashed potato mixture and stir until everything is well combined.
  4. Season the mixture with salt and pepper to taste.
  5. Spoon the mashed potato mixture into the prepared muffin tin, filling each cup to the top.
  6. Bake in the preheated oven for 20-25 minutes, or until the potato puffs are golden brown and set.
  7. Remove from the oven and let cool for a few minutes before carefully removing the potato puffs from the muffin tin.
  8. Garnish with chopped chives before serving.
    Tips:
  • Feel free to customize these potato puffs by adding in some cooked and crumbled beef, chopped vegetables, or different types of cheese.
  • Make sure your mashed potatoes are well-seasoned before mixing them with the other ingredients.
