Cheesy Mashed Potato Puffs
Ingredients:
- 2 cups of mashed potatoes (leftover or freshly made)
- 1 cup of shredded cheddar cheese
- 1/4 cup of grated Parmesan cheese
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of onion powder
- 1/4 teaspoon of paprika
- 2 eggs
- 1/4 cup of milk
- Salt and pepper to taste
- Chopped chives for garnish
Directions:
- Preheat your oven to 400°F (200°C) and grease a muffin tin with cooking spray.
- In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, garlic powder, onion powder, and paprika. Mix well to combine.
- In a separate bowl, whisk together the eggs and milk. Pour this mixture into the mashed potato mixture and stir until everything is well combined.
- Season the mixture with salt and pepper to taste.
- Spoon the mashed potato mixture into the prepared muffin tin, filling each cup to the top.
- Bake in the preheated oven for 20-25 minutes, or until the potato puffs are golden brown and set.
- Remove from the oven and let cool for a few minutes before carefully removing the potato puffs from the muffin tin.
- Garnish with chopped chives before serving.
Tips:
- Feel free to customize these potato puffs by adding in some cooked and crumbled beef, chopped vegetables, or different types of cheese.
- Make sure your mashed potatoes are well-seasoned before mixing them with the other ingredients.
