Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder

- 1/4 cup lemon juice
- 2 tablespoons melted butter
- 2 large eggs
- Zest of 1 lemon
- Vegetable oil, for frying
- 1 cup powdered sugar
Directions:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the milk, lemon juice, melted butter, eggs, and lemon zest until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).
- Drop spoonfuls of the doughnut batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove the doughnuts from the oil and place them on a paper towel-lined plate to drain.
- While the doughnuts are still warm, toss them in powdered sugar until coated.
- Fill a piping bag with lemon curd or jelly and inject a generous amount into each doughnut.
