Ingredients

Directions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix the milk, lemon juice, melted butter, eggs, and lemon zest until well combined.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  4. Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).
  5. Drop spoonfuls of the doughnut batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  6. Remove the doughnuts from the oil and place them on a paper towel-lined plate to drain.
  7. While the doughnuts are still warm, toss them in powdered sugar until coated.
  8. Fill a piping bag with lemon curd or jelly and inject a generous amount into each doughnut.
