For the Dough:
2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 tablespoons butter, softened
1 large egg
1/2 cup milk (plus more if needed)
1 teaspoon vanilla extract
For the Syrup:
1 1/2 cups sugar
1 cup water
1/2 teaspoon ground cinnamon
1 teaspoon lemon juice
Directions:
Start by making the syrup. In a saucepan, combine the sugar, water, cinnamon, and lemon juice. Bring to a boil over medium heat, then simmer for about 8-10 minutes until slightly thickened. Remove from heat and let it cool completely.
For the dough, whisk the flour, baking powder, salt, and sugar in a large bowl. Rub in the butter until the mixture resembles fine crumbs. In a small bowl, beat the egg with the milk and vanilla extract. Gradually add the wet ingredients to the dry, mixing to form a soft dough. If the dough feels too dry, add a little more milk.
Turn the dough out onto a lightly floured surface and knead briefly until smooth. Roll the dough into small balls, about the size of a walnut.
Heat oil in a deep pot to 350°F (175°C). Fry the balls in batches, turning them until golden brown and puffed. Remove and drain on paper towels.
While still warm, dip the donut holes into the cooled syrup, making sure they are well coated. Let them sit in the syrup for a minute before removing and placing them on a wire rack to drip off any excess syrup.
