High and Light Genoise It’s Really Unstoppable
Discover how to prepare this easy sponge cake. A cake that will serve as a base for all your sweet creations, very high and soft sponge cake.
1 sachet of vanilla sugar
200 g flour
1 baking powder of 7 g
Preheat the oven to 175 degrees.
Leave the drip pan on top to prevent the sponge cake from browning too much.
Butter and line the pan, bottom and sides with parchment paper.
Beat the eggs, sugar and vanilla sugar in a food processor for 5 minutes.
Add the flour sifted with the yeast in 3 times with a Maryse from the bottom to the top so that the mixture does not fall back.
Pour into the pan and bake on the middle rack.
Let cook 45 min.
It depends on the oven if your oven cooks quickly, watch from 30 min but without opening the oven.
