Healthy Sugar-Free Carrot, Apple and Oat Cake

Ingredients:

  • 2 cups grated carrots
  • 1 cup grated apples
  • 2 cups oats
  • 1/2 cup chopped walnuts
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 eggs
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract

Directions:

  1. Preheat the oven to 350°F (180°C) and grease a cake pan.
  2. In a large bowl, mix together the grated carrots, grated apples, oats, chopped walnuts, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the eggs, honey, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Pour the batter into the prepared cake pan and smooth out the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool before slicing and serving.
