Healthy Sugar-Free Carrot, Apple and Oat Cake
Ingredients:
- 2 cups grated carrots
- 1 cup grated apples
- 2 cups oats
- 1/2 cup chopped walnuts
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 2 eggs
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
Directions:
- Preheat the oven to 350°F (180°C) and grease a cake pan.
- In a large bowl, mix together the grated carrots, grated apples, oats, chopped walnuts, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the eggs, honey, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Pour the batter into the prepared cake pan and smooth out the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before slicing and serving.
Tips:
- You can add raisins or dried cranberries for extra sweetness and flavor.
- Serve with a dollop of Greek yogurt or a drizzle of honey on top.
