Carrot Walnut Cake! You will make this cake every day. Quick and easy.
Ingredients:
- 4 large eggs
- 1 and a half cups of granulated sugar (225 grams)
- 1 cup of milk (200 milliliters)
- 1 cup of vegetable oil (200 milliliters)
- 2 and a half cups of all-purpose flour (300 grams)
- 2 packets of baking powder (20 grams)
- 1 packet of vanilla extract (5 grams)
- 2 cups of grated carrots (about 3-4 carrots)
- 1 cup of chopped walnuts
Directions:
- Preheat the oven to 350°F (180°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, beat the eggs and sugar together until light and fluffy.
- Add in the milk and oil, and mix until well combined.
- Gradually stir in the flour, baking powder, and vanilla extract until a smooth batter forms.
- Fold in the grated carrots and chopped walnuts until evenly distributed.
- Pour the batter into the prepared baking pan and spread it out evenly.
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Tips:
- For extra moisture, you can add a half cup of crushed pineapple to the batter.
- Feel free to top the cake with cream cheese frosting or a dusting of powdered sugar for added sweetness.
