Hawaiian Pineapple Cake
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 tsp baking soda
- 2 eggs
- 1 can (20 oz) crushed pineapple, undrained
- 1 cup chopped pecans or walnuts
- 1/2 cup shredded coconut
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
Directions:
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, mix together flour, sugar, and baking soda.
- Add eggs, pineapple with juice, nuts, coconut, oil, and vanilla to the dry ingredients. Stir until well combined.
- Pour batter into the prepared pan and spread evenly.
- Bake in preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
