Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 tsp baking soda
  • 2 eggs
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 cup chopped pecans or walnuts
  • 1/2 cup shredded coconut
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together flour, sugar, and baking soda.
  3. Add eggs, pineapple with juice, nuts, coconut, oil, and vanilla to the dry ingredients. Stir until well combined.
  4. Pour batter into the prepared pan and spread evenly.
  5. Bake in preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
