GOLDEN PINEAPPLE CAKE

GOLDEN PINEAPPLE CAKE WITH PINEAPPLE BUTTERCREAM (REAL)

Ingredients:

¼ tsp. sugar
1 large egg white
6 tbsp. unsalted butter
1.5 oz. freeze-dried pineapple

Instructions:

Place the dried pineapple chunks in a dry blender and blend until a very fine powder forms. Put aside.
Bring a small saucepan filled with about 1 inch of water to a boil.
Whisk the egg white and sugar together in the bowl of your stand mixer.
Place the bowl on top of the small saucepan and continue to whisk the egg whites until you no longer feel the granules between your fingers.
Move the bowl to the standing mixer fitted with the whisk attachment and whisk until the mixture becomes foamy and doubles in volume.
Add the butter and continue to whisk until you have a smooth buttercream.
Add ¾ of the pineapple powder and mix until well combined.
Taste and add the rest of the powder if desired.
