Ingredients :
An eggplant
3 tomatoes
A drizzle of olive oil
1 tbsp. tablespoon of parsley
A clove of garlic
1 tbsp. teaspoon paprika
1 tbsp. teaspoon of cumin
½ tsp. teaspoon turmeric
Salt pepper
Preparation :
Wash and cut the eggplant into cubes, then immerse them in a saucepan filled with boiling salted water, cook for about 20 minutes, remove from the heat and drain.
Wash, peel and seed the tomatoes, cut them into cubes, add the olive oil, parsley, crushed garlic, paprika, cumin, turmeric, salt and pepper and cook, stirring constantly.
Once the tomato sauce is well reduced, add the cooked eggplant and simmer for 15 minutes, crushing everything with a fork.
Zaalouk is eaten hot or cold accompanied by meat skewers for example. Happy preparation and tasting to you!
