Come and treat yourself with this delicious soft lemon cake, it’s an easy recipe that always pleases. It is very light and will delight lemon lovers.
Ingredients :
4 eggs
130g sugar
80g butter or margarine
120g flour
1 packet of baking powder
Juice and zest of two unwaxed lemons
Preparation :
Separate the whites from the egg yolks, then In a bowl, beat the yolks with the sugar and the lemon until the mixture whitens.
Add the melted butter, flour and baking powder.
Beat the egg whites with a pinch of salt and gently fold them into the mixture.
Divide the batter into a buttered and floured 20cm diameter mold or lined with parchment paper.
Bake for about 20 minutes in the oven preheated to 180° (th.6).
Leave the cake to cool and dust it with icing sugar or cover it with an icing of icing sugar and a little lemon juice.
