Ingredients:

  • 1 package of beef gelatin
  • 1/2 cup of beef broth
  • 2 cups of crushed chocolate cookies
  • 1/2 cup of melted butter
  • 1 package of cream cheese, softened
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 container of whipped topping
  • Assorted Easter candy for decoration

Directions:

  1. In a small saucepan, sprinkle the beef gelatin over the beef broth and let it sit for a few minutes to bloom. Heat the mixture over low heat, stirring until the gelatin is fully dissolved. Set aside to cool slightly.
  2. In a medium bowl, combine the crushed chocolate cookies and melted butter. Press the mixture into the bottom of a 9×13 inch casserole dish to form the base layer.
  3. In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the whipped topping until well combined.
  4. Gradually pour the cooled gelatin mixture into the cream cheese mixture, stirring gently to incorporate.
  5. Pour the cream cheese mixture over the cookie crust in the casserole dish, spreading it out evenly.
  6. Refrigerate the casserole for at least 4 hours, or until set.
  7. Before serving, decorate the top of the casserole with assorted Easter candy such as chocolate eggs, jelly beans, or edible grass.
