Ingredients:

  • 6 large eggs, separated
  • 200g granulated sugar
  • 200g bread flour, sifted
  • 100ml whole milk
  • 60g honey, dissolved in 20ml warm water
  • 1 tsp vanilla extract
  • 50g unsalted butter, melted

Directions:

  1. Begin by preheating your oven to 170°C (340°F). Prepare a 9×9-inch square cake pan by lining it with parchment paper, ensuring there is a slight overhang on all sides for easy removal later.
  2. In a large mixing bowl, whisk the egg whites on medium-high speed using an electric mixer until they become frothy. Gradually add in the granulated sugar and continue to beat until you achieve stiff peaks. This will take about 5-7 minutes. Set aside.
  3. In another bowl, beat the egg yolks with the vanilla extract until slightly pale and creamy. Slowly incorporate the melted butter and milk, ensuring a smooth mixture.
  4. Gently fold the sifted bread flour into the yolk mixture using a spatula. Incorporate the flour in small batches to prevent lumps. Once combined, blend in the honey-water mixture thoroughly.
  5. Carefully fold the egg white mixture into the batter in thirds. This ensures the batter stays light and airy. Avoid over-mixing to maintain the cake’s fluffy texture.
  6. Pour the batter into the prepared cake pan, lightly tapping the pan on the counter to eliminate any large air bubbles.
  7. Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes before lifting it out using the parchment overhang. Let it cool completely on a wire rack.
  9. For the best texture, wrap the cooled cake in plastic wrap and let it rest overnight before slicing.
