Castella Cake
Ingredients:
- 6 large eggs, separated
- 200g granulated sugar
- 200g bread flour, sifted
- 100ml whole milk
- 60g honey, dissolved in 20ml warm water
- 1 tsp vanilla extract
- 50g unsalted butter, melted
Directions:
- Begin by preheating your oven to 170°C (340°F). Prepare a 9×9-inch square cake pan by lining it with parchment paper, ensuring there is a slight overhang on all sides for easy removal later.
- In a large mixing bowl, whisk the egg whites on medium-high speed using an electric mixer until they become frothy. Gradually add in the granulated sugar and continue to beat until you achieve stiff peaks. This will take about 5-7 minutes. Set aside.
- In another bowl, beat the egg yolks with the vanilla extract until slightly pale and creamy. Slowly incorporate the melted butter and milk, ensuring a smooth mixture.
- Gently fold the sifted bread flour into the yolk mixture using a spatula. Incorporate the flour in small batches to prevent lumps. Once combined, blend in the honey-water mixture thoroughly.
- Carefully fold the egg white mixture into the batter in thirds. This ensures the batter stays light and airy. Avoid over-mixing to maintain the cake’s fluffy texture.
- Pour the batter into the prepared cake pan, lightly tapping the pan on the counter to eliminate any large air bubbles.
- Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before lifting it out using the parchment overhang. Let it cool completely on a wire rack.
- For the best texture, wrap the cooled cake in plastic wrap and let it rest overnight before slicing.
