250 g (8.8 oz) flour
100 mL (3.4 fl.oz) hot milk
20 g (0.7 oz) butter, room temperature
20 g (0.7 oz) sugar
10 g (0.3 oz) fresh yeast
1 egg
½ teaspoon of salt

Preparation :

Dissolve a pinch of sugar in warm milk and add the fresh yeast. Set aside for a few minutes to activate.
Whisk the flour and salt together. Pour the warm milk and one egg into it, knead until you get a smooth dough. Start adding the softened butter when the dough is formed, while continuing to knead it with a stand mixer or by hand.
Cover the dough with plastic wrap and let rest for 1 hour.
Divide the dough into 8 pieces and roll each into a thin rope. Shape each rope into a snail and place on a piece of parchment. Cover and set aside for 20 minutes.
Heat the vegetable oil over low heat and carefully place the risen fritters in it, removing the parchment paper. Fry each doughnut for 5-6 minutes on each side.
Cover each doughnut with sugar and serve hot.
