Step 1: Prepare the Cheese Mixture

In a large mixing bowl, combine the shredded cheddar and mozzarella cheeses. Mix thoroughly until evenly combined. Place the cheese mixture in the refrigerator for 15–20 minutes. Chilling helps the cheese firm up, making it easier to shape.

Step 2: Set Up the Breading Station

In one shallow dish, mix the flour with garlic powder, onion powder, paprika, salt, and pepper. In another bowl, beat the eggs until smooth. In a third dish, add the panko breadcrumbs.

Step 3: Shape the Cheese Balls

Remove the chilled cheese mixture from the fridge. Using your hands or a small cookie scoop, roll the mixture into 1-inch balls. Place them on a parchment-lined tray. Try to make each ball uniform in size for even cooking.

Step 4: Bread the Cheese Balls

First, roll each cheese ball in the seasoned flour, coating it lightly but evenly. Next, dip the floured ball into the beaten egg. Then roll the ball in panko breadcrumbs, pressing gently so the crumbs adhere well. Repeat for all cheese balls. Once breaded, place the balls in the fridge again for about 15 minutes. This helps them hold their shape while frying.

Step 5: Fry the Cheese Balls

In a deep, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Fry 4–5 cheese balls at a time to avoid overcrowding. Fry for 2–3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. While still hot, season lightly with a pinch of salt.

Step 6: Serve

Allow the fried cheese balls to rest for 3–5 minutes before serving. Serve warm with dipping sauces like marinara, ranch, or spicy aioli.
