I make these zucchini balls every day! Easy dinner recipe in 10 minutes!

Ingredients:

  • 2 zucchini, grated
  • A pinch of salt
  • 200g (1 cup) ricotta cheese
  • 80g (1/2 cup) breadcrumbs
  • 1 tsp Herbs of Provence
  • 60g (1/4 cup) Parmesan cheese, grated

Directions:

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
  3. In a bowl, combine the zucchini, ricotta cheese, breadcrumbs, Herbs of Provence, and Parmesan cheese. Season with a pinch of salt and mix well.
  4. Roll the mixture into small balls and place them on the prepared baking sheet.
  5. Bake the zucchini balls for 15-20 minutes, or until they are golden and crispy.
