I make these zucchini balls every day! Easy dinner recipe in 10 minutes!
Ingredients:
- 2 zucchini, grated
- A pinch of salt
- 200g (1 cup) ricotta cheese
- 80g (1/2 cup) breadcrumbs
- 1 tsp Herbs of Provence
- 60g (1/4 cup) Parmesan cheese, grated
Directions:
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
- In a bowl, combine the zucchini, ricotta cheese, breadcrumbs, Herbs of Provence, and Parmesan cheese. Season with a pinch of salt and mix well.
- Roll the mixture into small balls and place them on the prepared baking sheet.
- Bake the zucchini balls for 15-20 minutes, or until they are golden and crispy.
- Serve hot and enjoy!
