Fluffy Vanilla Sponge Cake
Ingredients:
- 250ml (1 cup) of milk
- 170g (3/4 cup) of granulated sugar
- 4 large eggs
- 2 tsp of vanilla extract
- 220g (1 3/4 cups) of all-purpose flour
- 2 tsp of baking powder
- 1/2 tsp of salt
- 115g (1/2 cup) of unsalted butter, melted and cooled
Directions:
- Preheat your oven to 350°F (180°C) and grease a 9-inch round cake pan.
- In a small saucepan, warm the milk over low heat until it is just heated through.
- In a mixing bowl, beat the eggs and sugar together until pale and fluffy.
- Gradually add in the warm milk and vanilla extract, mixing until well combined.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Finally, fold in the melted butter until fully incorporated.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

- Be sure to sift your dry ingredients to ensure a light and fluffy cake texture.
- Do not overmix the batter, as this can result in a dense cake.
- For a more decadent twist, add in citrus zest or top with whipped cream and fresh berries.
