Strawberry Cream Cheese Stuffed Pancakes
Fluffy pancakes oozing with sweet cream cheese and fresh strawberries springtime brunch hit.
Ingredients:
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup milk
- 1 egg
- 2 tbsp melted butter
- 4 oz cream cheese, softened
- 1/2 cup strawberries, diced
- Maple syrup, for serving
Directions:
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- In another bowl, mix the cream cheese and diced strawberries until well combined.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of pancake batter onto the skillet.
- Spoon a dollop of the cream cheese and strawberry mixture onto the center of the pancake.
- Top with a little more pancake batter to cover the filling.
- Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes.
- Repeat with the remaining batter and filling.
- Serve the stuffed pancakes warm with maple syrup drizzled on top.
Tips:
- Make sure not to overmix the pancake batter to keep them fluffy.
- Feel free to add a sprinkle of powdered sugar on top for extra sweetness.
- Customize the filling by adding other fruits like blueberries or bananas.
