Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 4 oz cream cheese, softened
  • 1/2 cup strawberries, diced
  • Maple syrup, for serving

Directions:

  1. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  4. In another bowl, mix the cream cheese and diced strawberries until well combined.
  5. Heat a non-stick skillet over medium heat and pour 1/4 cup of pancake batter onto the skillet.
  6. Spoon a dollop of the cream cheese and strawberry mixture onto the center of the pancake.
  7. Top with a little more pancake batter to cover the filling.
  8. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes.
  9. Repeat with the remaining batter and filling.
  10. Serve the stuffed pancakes warm with maple syrup drizzled on top.
    Tips:
  • Make sure not to overmix the pancake batter to keep them fluffy.
  • Feel free to add a sprinkle of powdered sugar on top for extra sweetness.
  • Customize the filling by adding other fruits like blueberries or bananas.
