Mini Sugar Doughnuts

Ingredients:

  • 4 cups all-purpose flour
  • 6 tsp baking powder
  • 1 tsp salt
  • 2 cups granulated sugar
  • 2 eggs
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 tsp vanilla extract
  • Vegetable oil, for frying
  • Additional sugar, for coating

Directions:

  1. In a mixing bowl, sift together the flour, baking powder, and salt. Set aside.
  2. In a separate bowl, whisk together the sugar, eggs, milk, melted butter, and vanilla extract until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
  4. Roll out the dough on a floured surface to about 1/2 inch thickness. Use a small cookie cutter to cut out doughnut shapes.
  5. Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
  6. Carefully drop the doughnuts into the hot oil and fry until golden brown, flipping once. Remove and drain on paper towels.
  7. While still warm, coat the doughnuts in additional sugar.
  8. Serve and enjoy your mini sugar doughnuts!
