Castagnole (Carnival Ricotta Doughnuts)

Ingredients:

  • 1 cup of all-purpose flour
  • 1/4 cup of granulated sugar
  • 1/2 cup of creamy ricotta cheese
  • 1 egg
  • 1/2 teaspoon of baking powder
  • Zest of 1/2 lemon
  • Oil for frying
  • Granulated sugar for coating

Directions:

  1. In a mixing bowl, combine the ricotta cheese, egg, granulated sugar, and lemon zest until well blended.
  2. Gradually add the flour and baking powder to the mixture, stirring until a soft dough forms.
  3. Shape the dough into small balls, about the size of a walnut.
  4. Heat oil in a deep pan for frying, and carefully fry the doughnut balls until they are golden brown and puffed.
  5. Remove the fried doughnuts from the oil and drain on a paper towel.
  6. While the castagnole are still warm, roll them in granulated sugar until evenly coated.
  7. Serve the castagnole warm and enjoy the fluffy and festive treat!
    Tips:
  • For extra flavor, you can add a dash of vanilla extract or a sprinkle of cinnamon to the dough.
  • Make sure the oil is hot enough before frying the doughnuts to ensure they cook evenly and have a crispy exterior.
  • You can also dust the castagnole with powdered sugar or cocoa powder for a different twist.
