No-Bake Lemon Cookies
Ingredients:
- 1 cup (100g) almond flour
- 1/2 cup (120g) honey
- Juice and zest of 1 lemon
Directions:
- In a mixing bowl, combine almond flour, honey, lemon juice, and lemon zest.
- Mix well until a dough forms.
- Roll the dough into small balls and flatten them into cookie shapes.
- Place the cookies on a lined baking sheet and refrigerate for at least 30 minutes.

Tips:
- If the dough is too sticky, add more almond flour.
- You can also add a sprinkle of coconut flakes on top for extra flavor.
