Soft Apple Cake – Short & Crisp
Ingredients:
- 2 eggs
- 2 apples, peeled and diced
- 1/2 cup of granulated sugar
- 1/2 cup of neutral flavored oil
- 1/2 cup of milk
- 1 packet of baking powder (16 g)
- 2 1/2 cups of all-purpose flour
- Lemon or Orange flavoring
- Powdered sugar for dusting (optional)
Directions:
- Preheat the oven to 350°F (180°C) and grease a 9-inch cake pan.
- In a large mixing bowl, whisk together the eggs and sugar until light and fluffy.
- Stir in the oil, milk, and flavoring until well combined.
- Gradually add the flour and baking powder, mixing until a smooth batter forms.
- Gently fold in the diced apples until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 30-35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar before serving, if desired.
Tips:
- You can also add a sprinkle of cinnamon or nutmeg for extra flavor.
- Serve the cake warm with a dollop of whipped cream or vanilla ice cream for a delicious dessert.
