Mini Sugar Doughnuts
Ingredients:
- 4 cups all-purpose flour
- 6 tsp baking powder
- 1 tsp salt
- 2 cups granulated sugar
- 2 eggs
- 1 cup milk
- 1/4 cup butter, melted
- 1 tsp vanilla extract
- Vegetable oil, for frying
- Additional sugar, for coating
Directions:
- In a mixing bowl, sift together the flour, baking powder, and salt. Set aside.
- In a separate bowl, whisk together the sugar, eggs, milk, melted butter, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
- Roll out the dough on a floured surface to about 1/2 inch thickness. Use a small cookie cutter to cut out doughnut shapes.
- Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
- Carefully drop the doughnuts into the hot oil and fry until golden brown, flipping once. Remove and drain on paper towels.
- While still warm, coat the doughnuts in additional sugar.
